Lemon Rice - South Indian rice delicacy

Mamma!! Can you please prepare lemon rice today?

I remembered, 4 years back, when Baby S was learning manners in school, saying “sorry,” “please,” etc., one day, she had asked me the same thing suffixed with a "please" ðŸ˜Š ðŸ˜Š, and I was wondering why she is asking for lemon rice, then I realized she might have had it in school for breakfast and liked it.😋

Baby S started her schooling in Bangalore, and her school used to provide freshly prepared breakfast and lunch for all pre-primary students. They used to share the weekly and monthly menu at the beginning of the session itself, and different kinds of rice preparations were there.

At home, we were not so fond of typical South Indian dishes and never prepared them. But at school looking at other kids, Baby S started eating as well as loving South Indian dishes. Being a mother of a picky eater, I had quickly googled the recipe and modified it to suit our family’s taste, especially thinking about Daddy S…another picky eater in the household.😕

Bonus point, my modified recipe got so hit, that one of my Aunt, my mother-in-law’s elder sister, also liked it very much and asked for the recipe, now isn’t that’s a great achievement!!!

So here is my simple recipe;

Ingredients:

  • 2½ cup cooked rice
  • Juice of 2 lemons
  • ¼ tsp turmeric powder
  • Salt as per taste

For tempering;

  • 2 tbsp oil
  • 1 tsp mustard seed
  • 1 tsp urad dal
  • 1 tsp channa dal
  • 3 tbsp peanut
  • 2 whole red chili
  • 2 green chili
  • ¼ tsp asafoetida or hing
  • 1 sprig of curry leaves

Method:

  • Cook rice with water in a ratio of 1:2 (for 1 cup of rice, use 2 cups of water)
  • Spread the cooked rice in a wide bowl, so that the grains don’t stick to each other
  • Heat a kadhai and put 1 tbsp oil and fry the peanuts (you can roast them also), keep them aside
  • Add another tbsp of oil and put all the ingredients for tempering in the kadhai
  • Once the mustard seeds stop spluttering add ¼ tsp of turmeric powder and fry well
  • Add the cooked rice and add salt as per taste
  • Add the lemon juice and mix it nicely
  • Add the fried/roasted peanuts and mix again
  • Healthy and tasty lemon rice is ready to be served with roasted papad, Baby S’ favorite
  • You can serve it with some pickle also.
